Aloo Shimla Mirch



Taking it back to basics today! Aloo Shimla Mirch is literally translated to Potato Bell Pepper, which is easy to make, flavorful, and simply delicious. This recipe has been perfected, and will take you back home, making you feel like you‘re enjoying your moms cooking.


This flavor journey begins with a crunchy bite of the slightly roasted green bell peppers, and immediately followed with the soft and buttery perfectly spiced potatoes. The flavors and the umami of the peppers and potatoes are the perfect combination of a savory bite. Please try it out and enjoy!

Serving Size: 4 people

Prep time: 15 minutes

Cook time: 20 minutes

Total time: 35 minutes

Ingredients:

  1. 6 small boiled Potatoes and largely diced

  2. 1 cup of tomato sauce or 2 small tomatoes blended

  3. 1 cup diced onion

  4. 2 medium green bell peppers largely diced

  5. 1 tsp garlic minced

  6. 1 tbsp ginger grated

  7. 4 green chili

  8. 1/2 tsp Tumeric powder

  9. 1 tsp red chili powder

  10. 1 tsp coriander powder

  11. 1 tsp Garam masala

  12. 1 tsp cumin powder

  13. 1 tsp lemon juice

  14. Cilantro to garnish

  15. Salt to taste


Instructions:

  1. In a medium pan, heat some oil. Sauté bell peppers until semi soft (still want to keep that crunch).

  2. Keep peppers on the side, do not wash out pan. To pan, add chopped onion, and cook until golden brown (6 minutes)

  3. Add ginger, chilies, and garlic then continue to cook on medium flame. Add dry spices, and cook for 30 seconds until fragrant. Add tomatoes or tomato sauce, until it separates from pan.

  4. Then add the boiled potatoes and roasted peppers. Blend well, and then add lemon juice and salt.

  5. Lower flame to low heat, and cover. Continue to cook until ready to eat. Garnish with cilantro, and enjoy with naan!
