Ingredients:
6 small boiled Potatoes and largely diced
1 cup of tomato sauce or 2 small tomatoes blended
1 cup diced onion
2 medium green bell peppers largely diced
1 tsp garlic minced
1 tbsp ginger grated
4 green chili
1/2 tsp Tumeric powder
1 tsp red chili powder
1 tsp coriander powder
1 tsp Garam masala
1 tsp cumin powder
1 tsp lemon juice
Cilantro to garnish
Salt to taste
Instructions:
In a medium pan, heat some oil. Sauté bell peppers until semi soft (still want to keep that crunch).
Keep peppers on the side, do not wash out pan. To pan, add chopped onion, and cook until golden brown (6 minutes)
Add ginger, chilies, and garlic then continue to cook on medium flame. Add dry spices, and cook for 30 seconds until fragrant. Add tomatoes or tomato sauce, until it separates from pan.
Then add the boiled potatoes and roasted peppers. Blend well, and then add lemon juice and salt.
Lower flame to low heat, and cover. Continue to cook until ready to eat. Garnish with cilantro, and enjoy with naan!
