Thirsty Thursday is officially here! How will you quench your thirst this week? Well why not kick off this weekend with a refreshing, sweet, and spicy Boozy Nimbu Pani.
What exactly is Nimbu Pani? Nimbu Pani (or Shikanji) is literally translated as “lemon water,” but it is so much more than that! It is sweetened lemon juice, water, chaat masala and black salt. Simply put, it is the perfect spicy and sweet drink that will keep you wanting more and more. Not to mention, it’s filled with Vitamin C, so a great way to boost your immune system too.
The base of this drink is simple- a sweet lemon lime soda. The popsicle is where the fun is at! You can either keep it a simple Nimbu Pani, or make it an adult version and add your drink of choice. As the popsicle melts, it blends in with the lemon lime soda to make that perfect cocktail. The popsicle is a great way to keep the drink cool, without all the ice, mint, and leaves coming in your mouth.
To the popsicles, I added mint leaves to make this recipe even more cooling, but feel free to leave them out! You could skip adding honey or agave is a great way to skip added sugars to keep it healthier. Please try it out and enjoy!

Ingredients
1/2 cup granulated sugar
1/4 cup lemon juice (~juice of 2 lemons)
5 cups chilled water
5 cups lemon lime soda (chilled and kept on side)
1 tsp black salt
1 tsp chaat masala
Sliced citrus fruits of choice (I used lemon, mandarins, and lime), as well as mint springs (optional)
1/2 cup of alcohol of choice (optional)
Instructions;
Mix together in a pitcher, sugar, lemon juice, water, salt, Chaat masala, and fruits/alcohol if including
Pour into popsicle molds, and allow to freeze for at least 5 hours
When ready to serve, pour chilled lemon lime soda into wine glasses, and add boozy popsicle
