Fall Green Apple Sabji

With Fall here and all the apple picking going on, I am getting tons of messages and requests to do more apple recipes. Tired of the same Apple pies, I have a dish that’s unique, delicious, and will definitely make good use of those hand picked apples! Even if you don’t go apple picking this fall, this recipe is a great transition of fruit into fall. It’s sweet, it’s sour- dare we call it the Vegan Kung Po Apple?

Give this recipe a try, and with only apples as the main ingredient- it’s super quick. You can have this on the plate within 15 minutes (including clean up)! Try it out and let me know how much you love this appl-icious dish.

Serving Size: 3 people

Prep Time: 2 minutes

Cook time: 10 minutes

Total time: 12 minutes

Ingredients:

  1. 4 green apples

  2. 1 tsp of methi seeds (fenugreek seeds)

  3. 1 tsp Tumeric powder

  4. 2 dried whole red chilies

  5. 1/2 tsp red chili powder (optional)

  6. 1 tbsp ghee or oil

  7. Salt to taste

Instructions:

  1. Cut the apples into 16 pieces (bite sized, but make them all uniform)

  2. While the oil/ghee is warming up, on a medium to low flame- add fenugreek seeds, whole chilies, and Tumeric powder. Allow to brown for 15 seconds, careful not to burn

  3. Add diced apples and sauté with red chili powder and salt to taste

Enjoy!
