Here we are with another sweet fusion dish, because why not? It’s quarantine season, and if you’re not making sweets- are you even quarantining properly? For my next recipe, I was inspired by Momofuku Milk Bar in Manhattan. You know how the milk left in your cereal bowl tastes so good? Well, they’ve taken this concept and turned it into delicious treats—including cakes, cookies, and ice cream. Of course, I knew I needed to bring that similar taste to all my Desi food lover followers!
Barfi is a popular Indian milk based sweet dish that is prepared typically during Diwali or Holi (or in this case if there’s a global pandemic going on and you deserve to treat yourself). This sweet dish is so nostalgic, delicious, and easy to make. Please try it out and enjoy!
Serving size: 18 medium sized pieces
Preparation time: 5 minutes
Cooking time: 15 minutes
Total time: 20 minutes
Ingredients:
1/3 cup of ghee (or 1/2 cup butter)
1 cup of whole milk
1 cup of Fruit Pebbles cereal (or any brand cereal)
3/4 cup granulated sugar
3 cups milk powder
Instructions:
In a small fry pan, toast 1/2 cup of cereal (this adds another dimension of flavor to milk). Toast for 2-3 minutes.
Put that toasted cereal in the milk, allow it to get soggy.
In a medium non stick pan, heat ghee until melted. Then strain and add milk from cereal bowl.
Once the milk is bubbling, add milk powder slowly and continue to stir so there are NO lumps. Keep stirring for 2-3 minutes.
Add sugar, and continue to stir for 10 minutes on medium flame, or until mixture separates from pan.
Transfer this mixture to heat resistant baking tray. Smooth it with a spoon or spatula. Immediately garnish with remaining 1/2 cereal while warm and press down. Let it set until solid (at least one hour) and then cut into desired shape.
Store remaining Barfi in airtight container.
