Gulab Jamun Donut + Rose Saffron Glaze


Yup, you read that right. For those who many not be familiar, Gulab Jamun are sweet, saffron, rose, and cardamom soaked milk balls. It is one of the most well known Indian desserts around the world. Another well known and famous dessert of course, is the Donut. Why not combine the two for a delicious and perfect fusion dessert.



This decadent version of the beloved donut is delicious, baked, and easy to make. Finally, topped with a rose and saffron blossomed glaze, is my idea of bliss and pairs perfectly with the moist gulab Jamun donut.


Serving Size: 12 donuts

Preparation time: 30 minutes

Cooking time: 20 minutes

Total time: 50 minutes



Donut Ingredients:

  1. 2 sticks of unsalted butter (softened)

  2. 1 1/3 c. all purpose flour

  3. 1/3 c. dried nonfat milk powder

  4. 1 c. granulated sugar

  5. 4 large eggs (or make eggless by replacing with 1/4 c. yogurt)

  6. 1 tsp Vanilla extract

  7. 3/4 tsp cardamom powder

  8. 1/2 tsp salt


Syrup Ingredients:

  1. 1 c. water

  2. 1 c. granulated sugar

  3. 1/2 tsp saffron

  4. 1 tsp cardamom powder

  5. 1 cinnamon stick

  6. 1 tsp rose water

  7. 2 tsp lemon juice


Saffron Rose Glaze Ingredients:

  1. 2 c. powder sugar

  2. 2 tbsp whole milk

  3. 1 pinch of saffron

  4. 1 tbsp rose water

  5. 1/2 tsp cardamom


Instructions:

  1. Preheat oven time 350•F

  2. Spray nonstick donut pan

  3. In a medium size bowl, whisk together flour and milk powder and keep on side

  4. With a hand mixer in a deep bowl, mix together butter, sugar, and cardamom for 6 minutes until light and fluffy

  5. Add salt and vanilla extract, and mix

  6. Add one egg at a time (or yogurt) and mix

  7. Add flour mix and beat until well combined

  8. Put dough into a piping bag and cut tip, fill each donut 3/4 of way

  9. Bake for 15 to 20 minutes, or until passes toothpick test

  10. When donuts are 5 minutes from being done, make syrup. Add water, sugar, saffron, caradmom, cinnamon stick, rose water, and lemon juice to pan. Let it come to boil, allow to simmer for 2 minutes and shut off.

  11. Once out of the oven, poke holes into donuts, and pour syrup all over warm donuts (do while warm so it soaks in evenly)!

  12. For glaze: heat milk and add saffron and allow it to blossom. Then allow milk to cool.

  13. While donuts are cooling, mix together powder sugar, cooled saffron milk, rose water, and cardamom

  14. WHEN DONUTS ARE COOLED, dip donuts into glaze, and allow to set
