Holi Rainbow Cake Pops

Holi Rainbow Truffles 🌈 Holi hai!!! Happy Holi week my loves. To kick off our celebrations, I made these aesthetically pleasing and mouthwatering rainbow truffles. Less difficult than they look, these balls of joy will sure be a crowd pleaser. Holi, the celebration of color, has always been one of my favorite holidays (after Diwali). The colors, the warm weather, and the music is the perfect way to kick off the spring season. Please try these out and let me know your thoughts!


Cake Ingredients:

-Rainbow food coloring

-1/2 cup whole milk

-1 tsp baking powderi

-1 cup of all purpose flour

-1/4 tsp salt

-1 egg

-3/4 tsp of vanilla extract

-1/2 sugar

-1/4 cup unsalted butter (keep at room temperature for easy mixing)

-Muffin tin and liners


Cake pop filling and coating:

-1/2 container of ready made icing

-Candy melts

-Double boiler

-Tray lined with wax paper


Directions:

  1. Start with the cake, mixing the dry ingredients first. Make a well, and add the wet ingredients. Mix well for 2 minutes until lumps are gone.

  2. Divide cake batter between 6 bowls, then add food coloring. Be mindful about how much coloring you add, a little really goes a long way.

  3. Pour batter into cupcake liners and place in muffin tin. Bake at 345 degrees for 15 minutes until a toothpick comes out clean from center.

  4. Allow cakes to cool, then crumble cakes and add ready made icing. This is key to keep cakes soft and moist (I know I hate that word but perfect way to describe the texture.

  5. After blended in, roll the cake into mini disks and stack each color on top of each other.

  6. Once stacked, use Saran Wrap to perfect balls into round shape. Place balls in the freezer.

  7. While balls are hardening up in freezer, melt candy melts in double boiler. You can also microwave at 30 second intervals, but be cautious about over microwaving.

  8. Dip balls into chocolate, and set aside. They will harden on their own. For faster setting, place in the fridge for 5 minutes.

  9. Finally, take out and decorate as you please.


•For my “splatter paint” effect, I took some of the food coloring on a new toothbrush and rubbed my finger along the brush. I wasn’t happy with how it looked and probably will just use rainbow sprinkles in the future. Be creative and use your imagination- these balls are your canvas!
