Masala Egg Bites

These Masala Egg Bites are not only delicious and easy to make, but perfect for meal prepping and saving time! You can warm them up and grab them to go, or gobble them down for a quick breakfast before running out the door.



This flavor journey starts with the perfect crunch of melted and crispy cheese on top, followed by the fluffy spiced eggs, and finished off with the flavorful veggies. For the optimal bite, I definitely recommend eating these with Truffle Hot sauce!


Serving Size: 12 mini bites

Prep time: 5 minutes

Cook Time: 20 minutes

Total time: 25 minutes


Ingredients:

  1. 10 large organic eggs

  2. 1/2 cup whole milk or heavy cream

  3. 1 cup shredded pepper jack cheese

  4. 1 tsp diced jalapeños

  5. 2 tsp minced garlic

  6. 2 roma tomatoes diced

  7. 1/2 purple onion diced

  8. 2 tsp garam masla

  9. 1 tsp red chili powder

  10. 2 tsp Garam masala

  11. 1 tsp turmeric powder

  12. 2 tsp coriander powder

  13. 1 tsp cumin powder

  14. Cilantro for garnish

  15. salt and black pepper


Instructions:

  1. Preheat oven to 350F

  2. In a large bowl, whisk together eggs, milk, and spices

  3. Prep vegetables and dice up, add half cheese and diced vegetables to eggs and mix well

  4. Spray a silicone muffin/cupcake tray (or use liners). Place silicone tray on larger sheet so easy to remove and place in oven

  5. Add egg mixture until filled, careful to mix eggs before you fill it up so well blended

  6. Bake for 10 minutes, and then add shredded cheese on top without removing from oven

  7. Bake for another 10 minutes until cheese is crispy


  • You can freeze these in ziploc bags, to defrost just put in fridge night before

  • Easily make kid friendly by taking out jalapeños, red chili powder, and black pepper
