It’s the afternoon slump, and you need to pull yourself out. You reach over for your usual cup of tea, but honestly, who wants to drink a hot cup of tea when it’s humid out? Instead, try one of these individual perfectly spiced Chai Cheesecake with fresh whipped cream, on top of a bed of roasted Parle G cookies. If you don’t have access to Parle G cookies, Biscoff are equally as delicious. Try it out and enjoy!
Serving Size: 6 individual cheesecakes
Prep time: 20 minutes
Cook time: 30 minutes
Total time: 50 minutes
Ingredients for crust:
7 mini packets of Parle G cookies
6 tbsp unsalted butter, melted
1/2 cup granulated sugar
Ingredients for Chai Cheesecake:
1 tsp ginger powder
1 tsp cinnamon powder
1/2 tsp nutmeg
1/2 tsp cardamom powder
16 oz cream cheese room temperature
3/4 cup granulated sugar
4 oz full fat sour cream
1 tsp vanilla extract
2 large eggs
Instructions for Cheesecake:
Preheat oven to 350F
Line muffin tray with silicone liners, or spray with non stick spray
Blend cookies in food processor or crush with wooden spoon, and add melted butter and sugar
Place cookie mix in liners, and pat down with spoon until tightly packed
In a standing mixer, mix cream cheese and sugar until soft and fluffy (about 3 minutes)
Add sour cream, vanilla, and chai spices, mix well
On low speed, add eggs one at a time. After you add eggs, careful not to over mix
Pour cheesecake batter onto crusts
Bake for 30 minutes or until Center is set
Garnish with whipped cream and remaining Parle G biscuits
Optional: melt chocolate and pour into icing bag. Cut tip, and make letter “C” to make handles. Once ready to serve, add to cheesecakes to make it look like tea cup.
