First off, what exactly is Farro? It’s an ancient grain, that has recently gained popularity because of its high nutrient levels. Packed with protein, this healthy grain is sure to leave you full longer and feeling light. You can make it at the beginning of the week, and use it as a side dish throughout the week. For this recipe, I mixed the farro with vegetables, lentils, and seasoning to make a perfect summer salad.
This dish is a great source of vitamin B, Iron, fiber, magnesium, protein, zinc, and Vitamin C. Although I call it a salad, you won’t feel like you’re eating a bowl of greens, but just a bowl of deliciousness! I’ve cooked the beans in the Instant pot the night in the night before, but you can also make this easy and used canned beans! Just be sure to rinse the beans well. Please try it out and enjoy!

Ingredients
1 cup each of lentils of choice (I used black beans and garbanzo beans)
1 orange bell pepper diced
3 small Roma tomatoes diced
2 Persian cucumbers diced
2 avocados diced
1 purple onion diced
1/2 cup fresh cilantro finely chopped
1 packet of Farro (I used Trader Joe’s 8.8 oz)
2 tbsp lemon juice
1 tsp chaat masala (cumin powder if no Chaat masala)
1 tbsp Sriracha sauce
2 tsp paprika
Salt and pepper to taste
Instructions:
Pressure cook lentils until cooked (or cans if using)
Dice all vegetables
Cook Farro according to package
Add spices and lemon juice
Mix well together
Garnish with cilantro
Enjoy!
