Stuffed Apple Cider Donuts


The crunch of the leaves, the cool crisp breeze, the pumpkin spice, and all things nice! Fall is here!! Apple cider is an understated fall flavor, that brings a freshness and is transitional, unlike pumpkin. It can be enjoyed crisp and cold during the warmer days, or baked with cinnamon and sugar on those cooler days.



Apple cider donuts, probably one of my personal favorite donuts, is so simple to make and easily versatile. Being from New York, getting your bagel “scooped out” is a must. I thought- why not scoop out donuts and add a little something extra. And then it clicked- Apple cider donuts scooped, filled with warm cardamom spiced apples. It’s definitely a fall treat you’ll enjoy, and one that tastes even better with a hot cup of cider. Try it out and enjoy!

Prep time: 5 minutes

Cook time: 25 minutes

Total time: 30 minutes


Ingredients for donuts:

  1. 1 3/4 cup of all purpose flour

  2. 1 1/2 tsp baking powder

  3. 2 tsp ground cinnamon

  4. 3/4 tsp salt

  5. 1 cup unsalted room temperature butter

  6. 3/4 cup light brown sugar

  7. 3/4 cup granulated sugar

  8. 2 eggs at room temperature

  9. 1 tsp vanilla extract

  10. 1/2 cup room temperature apple cider

  11. Non-stick cooking spray

  12. 1/2 cup sugar + 2 tsp ground cinnamon set aside to coat donuts

Ingredients for Spiced Apples:

  1. 4 apples peeled and diced

  2. 4 tbsp sugar

  3. 1 tsp ground cinnamon

  4. 1 tsp ground cardamom

  5. Pinch of salt


Instructions:

  1. Preheat oven to 350•F

  2. Spray non stick spray on to donut pan

  3. In a bowl, add flour, salt, baking powder, and cinnamon and whisk well

  4. With mixer, mix butter, brown sugar, granulated sugar, until light and fluffy (4-5 minutes)

  5. Add eggs one at a time, and vanilla extract

  6. Add flour slowly, until well incorporated

  7. Pour batter into bag, and pipe into donut trays

  8. Bake for 12-15 minutes, until passed toothpick test

  9. While donuts are baking, add butter to large nonstick pan

  10. Toss together diced apples with cinnamon, sugar, cardamom and salt

  11. Add to pan, and cook on medium flame until apples are soft (9 minutes). Add to bowl and allow to cool

  12. Mix together coating sugar and cinnamon

  13. Let donuts cool for 3 minutes, and immediately toss in cinnamon and sugar mix

  14. Once cooled, cut in half, scoop out a little donut, and place in spiced apple mix
